Dark Chocolate Guinness Mousse Éclairs with Baileys White Chocolate Ganache

St Patrick’s Day is just around the corner. I have never really celebrated it in the traditional way but I am all for finding new fun ways to put alcohol into baking. These cupcakes are the most popular flavour (at any time of year). Another alternative involving a white chocolate Bailey’s ganache can be found here. This year it’s éclairs. I love choux pastry, light and crispy on the outside and it loves being a vessel for whatever tasty filling you have prepared.

Crème de Menthe Chocolate Custard Pots

With St Patrick’s day approaching once again it is time to start adding alcohol and liqueurs into the baking 🙂 For other St Patrick’s day recipes check out these cupcakes and these tarts.

Today our liqueur of choice is one of my favourites, crème de menthe. I am a big fan of mint so it comes as no surprise that this goes down well in our house. During the cold winter months it’s not uncommon for Dr B to spike my hot chocolate with a dash of this delicious green liqueur.
